Zest Japanese Kitchen Knives

The knives from “Zest Japan” are made of extremely rust-resistant and low-carbon AUS-8A steel. This knife is characterized above all by its extremely high sharpness and edge retention. Additionally, the knives can be easily resharpened. The hardness of the steel is between 58HRC and 59HRC and is comparable to 440 steels from various US manufacturers.
